Soybean, soya, soja or 大豆, scientifically known as Glycine Max, is a vegetable native to East Asia, which should not be a surprise given that it is a such an important part of Chinese, Korean and Japanese diet.
Soy is not only eaten as a vegetable, but also converted into sauces, fermented into health foods, extracted for oil, pressed into tofu, boiled into soy milk, processed into animal feed, etc... and now ground into a protein powder for people in need of extra protein!
Interestingly enough, although originated in Asia, the largest producers of the world's soya beans is the USA (32%), Brazil (31%), Argentina (18%) and then China (3.8%).
Fun fact: Soy is a very sustainable source of protein as it produces at least twice as much protein per acre than any other crop except hemp!
